Identifying imitation cheese and ice cream using NMR spectroscopy

Validating the composition of foods is a not just a matter of quality control but an issue of safety. Research is showing how nuclear magnetic resonance (NMR) spectroscopy could lead to ways to do it quickly, accurately and cheaply.

The risks of food adulteration

Food adulteration – the deliberate or accidental contamination of foodstuffs with banned substances – is an age-old problem which continues to pose modern-world dangers. In 2008, there was a poisoning epidemic in China, in which 300,000 people were made ill and six infants died due to consuming milk products or infant formula containing the industrial substance melamine. The contamination was deliberate – as melamine is a nitrogen-rich chemical, it is indistinguishable from protein on traditional tests and can therefore artificially inflate crude protein content measurements.

The incident highlights the limitations of traditional food analysis strategies. A major factor is that they rely on targeted analysis, so only certain compounds are tested for. In order to detect unexpected and unknown compounds in food and contend with the issue of 21st century food adulteration, rapid and non-specific methods of analysis are needed.

Eating too little could be causing you to gain weight, new research claims

FAILING to shed those kilos? It might not be because you’re eating too much – you could be eating too little.

Women who starve themselves to drop weight can end up packing it on when their body kicks into starvation mode and starts craving calories.

It is called the famine reaction and now a team of researchers is hoping to crack the answer to losing weight and keeping it off once and for all.

The famine reaction is activated whenever your weight drops below a certain threshold, triggering the nagging hunger and cravings for fattening foods experienced while trying to diet.

“It’s a term we use but it doesn’t necessarily mean one thing for all people,” said Bond University Professor Nuala Byrne who heads a new study.

“It’s a series of compensatory responses when someone is put into energy restriction.

“We’re testing how many of these responses occur or are meaningful in explaining the weight loss differences between people.”

The MATADOR 2 study, funded by the National Health and Medical Research Council, will investigate the famine reaction and its impact on dieters’ ability to lose weight.

First U.S. Implantation of Maestro vBloc to Control Hunger Pangs

EnteroMedics, a St. Paul, Minnesota company, announced the first commercial implantation of the Maestro vBloc Neurometabolic Therapy system in the U.S. The device was approved by the FDA earlier this year for for treatment of obesity, metabolic disorders, and other GI conditions.

vBloc technology, as the name implies, blocks signals originating in the stomach from reaching the brain via the vagus nerve. This prevents the patient feeling hunger pangs and will hopefully bring a sense of control to many on the front lines of the obesity epidemic.

High carbohydrate, low protein diet could be as effective as low calorie diet for health, researchers say

fresh bread and wheat on the wooden

In the latest diet wars salvo, a new study has found low protein, high carbohydrate diets could be just as effective as low calorie diets at promoting a long life as well as a healthy heart and good digestion.

Scientists know the only proven way to live longer is to drastically restrict calories.

But now researchers from the University of Sydney’s Charles Perkins Centre have found the same benefits with a low protein, high carbohydrate diet.

"We have known for many years that caloric restriction diets increase lifespan in all manner of organisms," Professor Stephen Simpson, academic director of the Charles Perkins Centre and report author, said.
